Obtained from the milling and subsequent sifting of national and community soft wheat, freed from foreign substances and impurities. Suitable for doughs with long leavening (over 12 h) and maturation of about 70 h (controlled temperature, 3-4°C); high hydration (about 65%).
Usage tips
Ideal for preparing sweet leavened baked goods, such as croissants, puff pastry, and savoury ones such as bread, pizza, focaccia.
