Winemaking
Soft pressing of the marc, maceration of the skins for 8 hours at 4° C. Fermentation in stainless steel tanks at a controlled temperature of 17/18° for a duration of 15-20 days .
Refinement90 days in steel and one month in bottle at controlled temperature .
BottlingCold sterile with microfiltration and nitrogen back pressure.
Method of preservationIn a very cool (13° C) and not excessively humid environment, away from light.
Serving temperature and recommended glass8°-10° C. White wine glass, tulip shape with long transparent glass stem.
