iGattopardo Salaparuta White DOP -75 cl

Grape variety: Catarratto - Grillo

Age of vines: 10 years

Altitude: 500–600 meters above sea level

Vineyards

Raised with espalier with medium-high density of vines per hectare (3000 plants). Simple Guyot pruning. Yield 90 quintals per hectare.

Climate: Mediterranean, with hot summers and mild winters.

Harvest: manual from late August to September.

Winemaking

Soft pressing of the marc, maceration of the skins for 8 hours at 4° C. Fermentation in stainless steel tanks at a controlled temperature of 17/18° for a duration of 15-20 days .

Refinement

90 days in steel and one month in bottle at controlled temperature .

Bottling

Cold sterile with microfiltration and nitrogen back pressure.

Method of preservation

In a very cool (13° C) and not excessively humid environment, away from light.

Serving temperature and recommended glass

8°-10° C. White wine glass, tulip shape with long transparent glass stem.
