Vineyards
Raised with counter-espalier with medium-high density of vines per hectare (3000 plants). Simple Guyot pruning. Yield 100 quintals per hectare.

Winemaking
Soft pressing of the marc, maceration of the skins for 10 days. Fermentation in stainless steel tanks at a controlled temperature of 28°/30° C. for a period of 15-20 days (malolactic)
Refinement
3 months in steel silos and 3 months in bottle at controlled temperature.
The bottling
Cold sterile with microfiltration and nitrogen back pressure.
Duration
Drink now or age for 6-8 years in suitable cellars.
Method of preservation
In a very cool environment (14°-16°) and not excessively humid.
