Pure Macina Bio - Wholemeal Flour
Wholemeal flour obtained from the “whole body” milling of organic Sicilian durum wheat, with bran of smaller grain size. The flour is obtained from La Ferté stone milling which, thanks to the low processing temperatures, preserves the nutritional and sensory characteristics of the final product. The flour preserves all the components of the caryopsis: the bran, rich in fiber (with a control action on bad cholesterol and glycemia) and mineral salts, the wheat germ, rich in essential fatty acids and polyphenols (with antioxidant action).
Usage tips
Suitable for the preparation of wholemeal bread and baked goods, both savoury (focaccia, pizza) and sweet (pies, biscuits). Bran increases the water absorption of the flour and reduces the extensibility of the dough compared to the product without bran and it is therefore recommended to extend the kneading times to improve its workability.
