Pure organic grinder
Whole flour obtained from the "full body" milling of organic Sicilian durum wheat, with bran of a smaller particle size. The flour is obtained from La Ferté stone milling which, thanks to the low processing temperatures, preserves the nutritional and sensory characteristics of the final product. The flour preserves all the components of the caryopsis: bran, rich in fiber (with an action to control bad cholesterol and blood sugar) and mineral salts, wheat germ, rich in essential fatty acids and polyphenols (with an antioxidant action).
Usage tips
Suitable for the preparation of wholemeal bread and both savory (focaccia, pizza) and sweet (tarts, biscuits) baked goods. The bran increases the water absorption of the flour and reduces the extensibility of the dough compared to the product without bran and it is therefore advisable to extend the kneading times to improve its workability.
